seems to be a nearly cultish obsession
shared by many and
epitomized by the starbuck's
pumpkin spice latte...
of which i'm not so much a fan.
blasphemy, i know,
but eh, it's fakeish pumpkiny
i think, so it's not my fave.
as soon as the weather gets cool,
pumpkin foods start popping up
everywhere
and i have this sudden need for my
absolutely favorite fall food...
pumpkin cranberry bread!
it's been a staple in my family
for as long as i can remember.
i could eat the whole loaf...
and have, in a day.
it's that good!
no chance i could
get a picture of the full loaf
because i typically cut into
it before it's even cooled.
Pumpkin Cranberry Bread
- 3 eggs, slightly beaten
- 2 cups sugar
- 3/4 cup oil
- 1 1/2 cups pumpkin (use Libby, it's the best)
- 3 3/8 cups flour
- 1 1/2 T pumpkin pie spice (recipe to follow if you don't have it/want to buy it)
- 3/4 tsp salt
- 1 1/2 tsp baking soda
Combine above in a large bowl. Make well in center. Pour in pumpkin mixture. Stir just until moistened. Stir in 1 1/2+ cups chopped cranberries. Spoon batter into 2 greased & floured 8" loaf pans. Bake @ 350 for approx 1 hour or until a toothpick inserted in the center comes out clean.
Ingredient quantities for 2 9" loaf pans:
- 4 eggs
- 3 cups sugar
- 1 cup oil
- 2 cups pumpkin
- 4 1/2 cups flour
- 2 T pumpkin pie spice
- 1 tsp salt
- 2 tsp baking soda
- 2+ cups cranberries, chopped
Pumpkin Pie Spice:
- 4 tsp cinnamon
- 1 tsp cloves
- 1 tsp nutmeg
- 1 tsp ginger
- Mix!
You'll probably have leftover pumpkin...it's awesome mixed in with some softened cream cheese (and a pinch of sugar and any leftover pumpkin pie spice) or even butter!
