Easy as pie


mmmm....i'm making a 10 minute pie!

sound too good to be true?!
well it kinda is,
it takes a total of 45 minutes, 
but only 10 minutes of YOUR time,
the oven does the rest.
that's a pretty good deal, right?!

i snagged this free recipe from Penzeys Spices
while in Chestnut Hill the other weekend.
it's super simple since
most of the ingredients are hiding in my 
fridge and cabinets at the moment
PLUS
you just throw everything together in a bowl.
how easy is that?!
kinda like my favorite video games...
ya know, the ones that take zero skill or strategy
and you can win just by mashing on all of the buttons at once?
yea this pie is like that.

it's in the oven right now,
 so i'll post a pic
and update on the outcome
once i've tasted it!


No Crust Coconut Pie:
1 stick butter, melted
2 eggs
1 1/2 cups sugar
1 1/2 tsp vanilla extract
1/4 - 1/2 tsp ground nutmeg
1/2 cup flour
2 cups milk
3 cups shredded coconut*

Preheat oven to 350.  Combine all of the ingredients in a large bowl and mix well.  Pour into an ungreased 9inch pie plate and bake until browned, about 35-45 minutes.  Let cool before slicing, and run a thin knife around the edge before cutting.

No crust needed...duh, read the title!

*fyi if you use a 14oz bag of coconut, you'll have some left over...i highly recommend eating most of it :) i always forget how much i love coconut!!


7.20 update:
so here's a pic of the pie...finally...
it was SO good!
i took it out of the oven at 40 minutes.
the middle was still a little loose,
probably could've used an extra 5 minutes or so 
but i was afraid the edge would get too brown.
it firmed up to good consistency once cooled
but afterwards (two days later while eating it for breakfast)
i did notice it was a little juicy lookin'.
maybe a few extra minutes in the oven would've helped that,
or maybe eating it faster would've done the trick!
