amica 19.7

oops.
signed up for another triathlon!
it's the last tri in the amica 19.7 series
and it's in newport, ri.

unfortunately my parents will be galavanting in italy
that weekend...
don't you feel soooo bad for them!?
but hopefully there will be enough people around to cheer us on.

yep, that's right...us.
think michael got a little jealous when i crossed that finish line,
so he's decided to figure out how to swim (more on that later)
and start training too.

stop at the sign of the lemon

fun fact...
hershey park sells
i stopped dead in my tracks
and started getting very excited...
and of course none of the other park goers
(minus mz and my sister)
understood my hysteria
because they are not from rhode island
and they did not have a dad that worked for del's as a young lad
and they did not have a del's cart at their wedding...
for you NJ/PA people, think water ice but a little slushier.
comes in a few flavors but lemon's the only way to go.
and if you use a straw or a spoon
i WILL point and laugh at you.
shaking it around and squeezing the side of the cup
is the only way to go...fact.

can't wait to get some del's inflicted brain freeze this weekend in rhody!

today was horrendous.
worked sucked.
a lot.

cupcakes almost didn't even help.

but this made me laugh,
out loud,
at my desk,
a lot.

Hyperbole and a Half

kisses

when i was little,
or maybe before i was born,
i don't know and it doesn't matter,
it was before i can remember...
my parents went to hershey park.

there are some pictures
(which i will scan and post when i'm home in ri!)
of my mom 
and a very old car,
and me as a baby,
and a fantastic hershey's kisses t-shirt.

somehow,
that shirt made it through many years,
a million washes,
and into my dresser.
it's the softest thing i own
and i'm always nervous that one day i'll put it in the wash
and it will come out in pieces.
i've tried to find a replacement
but, alas,
the company that made the shirt is no longer in business.
go fig.

so you can only imagine my excitement
when i found this on our way out of hershey park!!
mom's shirt on the left, my new one on the right.
not exactly the same, 
but pretty darn soft and sparkly, 
so it gets the job done.
oh and how cool is this...

90 degrees

the other day i took a very important
vacation day...
to go to hershey park!!!
it was AWESOME!

i hadn't been to an amusement park in sooo long
and i had heard people claim that the rides
at hershey were kinda lame,
so i didn't get my hopes up.
but it did not disappoint!
we - mz & kara -
(yea she's not only a world traveller, but she's got the pa/ma trip down pat)
got there earlyish on a very hot day
and avoided most of the water park 
but hit all of the roller coasters
without barely ever standing in line.
couldn't have asked for a better day.
not gonna lie though,
this ride kicked my butt.
it's called Fahrenheit and although kara
wanted to go on it first thing in the day,
i kept stalling,
hoping that i'd miraculously stop being a total chicken as the day continued.
yea, that didn't happen.
i sucked it up and went on the ride,
but i'm pretty certain
kara and michael were afraid i was going to puke or something...
based on the comments on how bad
i looked right before we got on, haha.
sometimes my brain gets the best of me!
in case you're wondering, it's 15 seconds to the top...
90 degrees straight up into the sun.
i know because i counted,
while on the ground,
multiple times...
so i knew the exact second when my life would flash before my eyes
:)

sleep.

that's about all i'm capable of doing this week.
i don't know what's wrong with me...
maybe the roller coasters shook up my brain too much,
or maybe the smoke from the crazy bridgeport fire poisoned me,
or maybe the lack of exercising is messing with my body.
all i know is that i'll be lucky if i can finish typing this
 without landing face down on my keyboard.
oy.

Easy as pie


mmmm....i'm making a 10 minute pie!

sound too good to be true?!
well it kinda is,
it takes a total of 45 minutes, 
but only 10 minutes of YOUR time,
the oven does the rest.
that's a pretty good deal, right?!

i snagged this free recipe from Penzeys Spices
while in Chestnut Hill the other weekend.
it's super simple since
most of the ingredients are hiding in my 
fridge and cabinets at the moment
PLUS
you just throw everything together in a bowl.
how easy is that?!
kinda like my favorite video games...
ya know, the ones that take zero skill or strategy
and you can win just by mashing on all of the buttons at once?
yea this pie is like that.

it's in the oven right now,
 so i'll post a pic
and update on the outcome
once i've tasted it!


No Crust Coconut Pie:
1 stick butter, melted
2 eggs
1 1/2 cups sugar
1 1/2 tsp vanilla extract
1/4 - 1/2 tsp ground nutmeg
1/2 cup flour
2 cups milk
3 cups shredded coconut*

Preheat oven to 350.  Combine all of the ingredients in a large bowl and mix well.  Pour into an ungreased 9inch pie plate and bake until browned, about 35-45 minutes.  Let cool before slicing, and run a thin knife around the edge before cutting.

No crust needed...duh, read the title!

*fyi if you use a 14oz bag of coconut, you'll have some left over...i highly recommend eating most of it :) i always forget how much i love coconut!!


7.20 update:
so here's a pic of the pie...finally...
it was SO good!
i took it out of the oven at 40 minutes.
the middle was still a little loose,
probably could've used an extra 5 minutes or so 
but i was afraid the edge would get too brown.
it firmed up to good consistency once cooled
but afterwards (two days later while eating it for breakfast)
i did notice it was a little juicy lookin'.
maybe a few extra minutes in the oven would've helped that,
or maybe eating it faster would've done the trick!

i'm sure you're all thinking...
wait, there's more to this triathlon weekend series?!
uuughh!

but this is good,
so pay attention!

a friend at work recently
mentioned an amazing chocolate shop,
with a killer brunch menu,
right here
in philadelphia.

i checked out the website,
emailed it to just about everyone i knew,
and voila!
(note that there's a 'V' at the beginning of this word people, sheesh, pet peeve!)
just like that,
it was on the list of places i must eat at in my lifetime.

how i have gone so long without ever
hearing of this wonderful
willy wonka-esque place
still has me baffled,
but i am just thankful i was clued in!

if you love chocolate,
you will understand that you MUST
find one near you and go as soon as possible!
and you're in luck, they're popping up everywhere.

the place is
just saying it makes me crave
one of his intense and creative cocoa concoctions!
ideal for brunch, lunch, or anytime really.
the menu's great
and the chocolate's even better.
hug mugs as a parting souvenir should be required
(thanks dad!).

be jealous...

and if don't like chocolate 
i'm sure i could say things like
'oh they have other great things on the menu'
because they do...or...
'well you don't HAVE to each chocolate when you go there'
because you don't.

but honestly,
if you don't like chocolate,
all i can think to say is...
WHAT?! 
WHY NOT?!?!
